Fudgey Chocolate brownies with a smear of chocolate and a sprinkle of crushed candy canes.
- 1/2 cup coconut oil melted and cooled
- 1 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/4 tsp baking powder
- 1 tsp instant espresso
- 1/3 cup cocoa powder
- 1/4 tsp salt
- 1/2 cup flour
- 1/3 cup crushed candy canes
- 1/2 cup semisweet chocolate cut into small pieces
- 1/4 cup cream
Grease a 9x9 inch pan and preheat oven to 350F.
Beat the melted coconut oil and sugar until fully combined.
Mix in the eggs and vanilla.
In a separate bowl whisk together the flour, baking powder, cocoa powder, instant espresso and salt.
Add the dry mixture to the wet mixture and stir until combined.
Pour the batter into your baking pan and bake for about 20 minutes.
While the brownies are cooling melt the chocolate and cream in a small bowl.
Spread the chocolate ganache onto the brownies and sprinkle with crushed candy canes.
You could add nearly anything to this recipe. I might suggest a handful of chocolate chips, toasted walnuts or pecans. These could also replace the candy cane if desired.
Make sure you grease the pan well! Has anyone used a parchment paper liner?
The brownies should just be pulling away from the sides when ready.
I gave mine a healthy swipe of chocolate ganache.
And a sprinkle of crushed candy cane because Christmas.
