Back when I was in high school, I thought I had an invincible metabolism. I would have a whole wheel of brie and a baguette for lunch. To top it off, I’d finish it off with some pasta. Oh boy… are those days are over! But on a special occasion — drinks with old friends, for example — I’m happy to indulge. These brie and cherry bites are a total snap to make. I used frozen puff pastry for this recipe but you can easily substitute that for some filo cups! The combination of brie and cherry jam is a longstanding favorite of mine. There are so many great combinations. I’d love to hear your favorite! Enjoy.
You can always make your own cherry preserves but I was short on time and snacked on too many of the fresh ones so store-bought it is! Sorry Ina ??

I made these a couple of different ways and the best method is to bake the shells for a bit press the puffy centers down to make the bowl then add the cheese, jam and pecans and bake till golden brown.
Resist temptation an don’t over-fill!
Just so you know, these have too much filling. It will leak out and make a mess. So be a bit more conservative with your cheese than I was this first time!

Too delicious to be this easy. You won't be able to make enough!
- 2 frozen puff pastry packages
- 1 Large piece of Brie or Camembert
- 1/3 cup cherry preserves
- 1/3 cup chopped pecans
- 1 egg
- 1 tbsp water
Cut the thawed puff pastry into circles and press into a mini tart tin.
Mix the egg and water to make an egg wash. then brush the pastry and bake at 400F for about 10 minutes.
Press the centers of the pastry in with a spoon and then add about a tablespoon of cheese and a teaspoon of the cherry preserve. sprinkle with pecans and bake until cheese is melted and pastry is golden brown.
