I love figs and while I traditionally devour them as soon as I get them in my hot little hands occasionally I can wait it out and incorporate them into a proper dish. I love the way the sweet figs pair with peppery rocket and toasted walnuts. Every bite has a lot of flavor and texture. Freshly shaved Pecorino Romano brings it all together although I can easily see little dollops of goat cheese in it’s place.
Ripe figs paired with toasted walnuts, Pecorino Romano, rocket and a honey balsamic reduction.
- 7 Figs
- 1/4 cups toasted walnuts
- 9 oz mixed greens
- 1/4 cup Pecorino Romano Shaved
- 1/4 cup balsamic vinegar
- 3 tablespoons honey
Toast walnuts and cut figs.
- Pour vinegar and honey into a small pan on medium low heat and stir. Cook until reduced by about 1/3.
For the assembly:
Add ingredients to a large bowl, toss and serve. Add sea salt and pepper to taste.
