1tablespooncornstarch
½teaspoonfine sea saltplus more to taste
1/4cupolive oil
Instructions
Preheat oven to 400F. Peel your sweet potatoes then cut into roughly 1/4" thick sticks.
Sprinkle cornstarch over the sweet potato then toss so they are evenly covered. Drizzle olive oil over the fries and toss once more for even coverage.
Arrange fries on baking sheets lined with parchment paper or silicone mats. Make sure to give about an inch of space between each one, if they are too close you'll steam them and they'll be soggy.
Bake at 400F for 8-10 minutes or until golden on the bottom then flip each one over and bake another 8-10 minutes. If you're baking on multiple racks swap places after the flip.
Dump fries onto a wire rack and allow to cool for 2 minutes then return to baking sheet and sprinkle with salt and any other desired seasonings to taste.

Mind the rack position! Fries will burn when closer to the bottom of your oven. Center rack is perfect but you can have a rack towards the top as well, just allot more bake time for it.
The easiest way to get an even distribution of corn starch is to sift it over the sweet potato then toss.
You can prep ahead and soak your cut sweet potato in cold water for up to 24 hours.
Some spices you make enjoy adding: cinnamon, chili powder, garlic salt, cumin, curry powder, cajun seasoning, and even minced parsley for a pop of color.
Warm your fries in the oven at 300F for about 8 minutes.
