  • 2 cups chopped onions
  • 4 cloves garlic minced
  • 1/2 cup carrot very finely diced
  • 3 tbs olive oil
  • 2 tsp kosher salt
  • 1 tsp freshly ground black pepper
  • 1/2 tsp chopped oregano
  • 1/2 cup fresh parsley finely chopped
  • 1 tsp fresh thyme leaves 1/2 teaspoon dried
  • 1/3 cup Worcestershire sauce
  • 1/2 cup chicken stock
  • 2 tsps tomato paste
  • 3 1/2 lbs ground turkey
  • 1 cup dry bread crumbs plain
  • 2 large eggs beaten
  • 2/3 cup ketchup



  1. Cook the onion in a large skillet over medium heat with 2 tbsp olive oil until translucent, add the garlic and cook an additional 2 minutes. 

  2. Add carrot, 1 tsp salt and 1/2 tsp pepper and cook until softened. 

  3. Add Worcestershire sauce, tomato paste, 1/3 cup ketchup, chicken stock, oregano, parsley, and thyme, mix and transfer to a bowl to cool.

  4. In a large bowl mix the turkey, eggs, breadcrumbs and onion/herb mixture. (I’ve found the best way is with clean hands.)
  5. Shape into a rectangular loaf on a lightly oiled baking sheet. 

  6. Brush with the remaining ketchup and place in oven at 375F for about 50 minutes or until internal temperature registered at 170F. 

  7. Put a pan of water on the bottom rack to help prevent cracking.

  8. Garnish with parsley
