For the Mini Cakes:

For the Raspberry Sauce:

raspberries

For the Cream Cheese Frosting:

For the Ganache:

dark chocolate
chopped

Instructions
INSTRUCTIONS
For the Mini Cakes:
In a large bowl, sift together dry ingredients including sugar.
In another bowl, mix the wet ingredients together.
Combine wet and dry until combined.
For the Cheesecake Frosting:
In a bowl, combine cream cheese and butter. Add in confectioners sugar a cup at a time. Mix until a desired consistency is reached.
For the Raspberry Sauce:
In a saucepan, combine water, raspberries and sugar. Cook on medium until they break down. Muddle the berries and stir into a sauce consistency.
For the Ganache:
Melt the cream and chocolate.
For the Assembly:
Slightly overfill a well greased donut pan with batter.
Bake at 340F for about 15 minutes or until the cakes are springy.
Allow the cakes to cool.
Strain the raspberry sauce mixture and let it cool in a bowl.
Fill with cakes with chocolate ganache.
Pipe the cream cheese frosting
Drizzle the raspberry sauce on.
Dip raspberries in chocolate and place on top of the cakes.
