For the Sandwich:

  • 1 loaf sourdough bread fresh
  • 3-5 oz Sharp Cheddar cheese
  • 3 oz Gouda cheese double creamy
  • 3 oz Jarlsberg cheese
  • 4 Heirloom tomatoes large
  • 2 tbsp Jalapeno jam optional
  • 4 tbsp butter unsalted
  • 1 Pinch kosher salt

For the Sandwich:

  • Heat an iron skillet over high heat.
  • Cut a bread loaf into large slices.
  • Butter each side.
  • Cut cheese into long slices. Add to one side of bread.
  • Slather on jalapeno jam.
  • Cut heirloom tomato slices and set aside.
  • Assemble the sandwich.
  • Cook on one side for about 3 minutes or until the cheese is partially melted.
  • Take off and add tomatoes.
  • Return sandwich to the other uncooked side. Cook for another 3-5 minutes until the cheese has melted.

  • Make sure to use your favorite bread for this sandwich, it really makes a difference!
  • You can play with the cheeses used in this recipe, if you can find a double cream gouda though I highly recommend it!
  • If you're making multiple sandwiches make sure to adjust your cook time as the pan will keep heating up.
  • I added some thin slices of jalapeño into one of the sandwiches and loved the extra spice. You might want to give that a try if you're a spice lover.
