Add the food coloring and water to a medium bowl and mix.
Add the coconut and toss until well incorporated with the color. Set aside.
For the Cake
Preheat oven to 350F. Butter and flour 4 6" pans. I use cake strips to aid in even baking but these are optional.
Melt the chocolate and butter in a small bowl. You can use a double boiler or microwave at half power in 20 second spurts.
Sift the flour, ground almonds, baking powder and soda into a large bowl and whisk together.
In a stand mixer fitted with a whisk attachment add the eggs and sugar and mix on high for several minutes. Add the yogurt, melted chocolate mixture and milk, beat until well incorporated.
Add the flour mixture and mix on low until just combined.
Distribute the batter evenly to the three pans anf bake at 350F for about 25 minutes or until a toothpick inserted in the center comes out clean.
For the Buttercream
Melt the chocolate and butter in a small bowl. You can use a double boiler or microwave at half power in 20 second spurts. Set aside to cool
Beat the butter until light and fluffy.
Add the powdered sugar and cream and beat until smooth.
Divide the buttercream into three batches. One small one to be tinted orange, a larger on for the white filling and the largest batch to be mixed with the melted chocolate.
To Assemble
Use the orange and white buttercream for the filling between each layer.
Cover the outside with the chocolate buttercream and smooth. You might do a crumb coat if you're concerned about crumbs...
Add the coconut grass on top and place chocolate eggs.Enjoy!
