Melt chocolate in microwave on 50% power or on a double boiler. You may add a teaspoon or two of vegetable oil if you want a more pliable and melt-y chocolate.
Pipe or spoon your melted chocolate into cupcake liners.
Smooth out bottom and spread onto sides with a small spoon. You could add some crushed graham cracker or caramel etc. if desired.
Allow chocolate to set in fridge for an hour.
In the meantime, mix the ingredients for the filling.
Pipe or spoon in the cheesecake filling. You could stop here or add some optional topping or you could top off with melted chocolate as I chose to.
