In a medium bowl, stir together the shredded chicken, salsa, cheese, sour cream, and taco seasoning.
Wrap 4 to 6 tortillas in a damp paper towel and microwave for 25 seconds. Once heated, cover the tortillas to keep them warm.
Spoon about 1½ tablespoons of the chicken mixture along one edge of each tortilla. Roll up the tortillas tightly.
Preheat the air fryer to 400°F.
Place the taquitos, seam side down, in the air fryer basket, leaving space between them. Spray the tops with cooking spray.
Cook for 6 to 7 minutes or until crispy. Remove the taquitos and keep warm. Continue warming tortillas, filling, and rolling taquitos while each batch cooks.
Serve hot with with guacamole, sour cream, and salsa.
Notes
For efficiency: While each batch of taquitos is cooking, prepare the next batch. Do not roll up all the taquitos at one time. They will dry out, and the tortillas will start to crack while waiting to be cooked. You can keep them warm in a 200°F oven while each batch cooks.
Warm up the tortillas to make them pliable. Don’t skip this step! Otherwise, they will break when you start to roll them.
Wrap the taquitos tightly so they do not come apart in the air fryer. Be careful, though, as corn tortillas crack easily.
Place the air fryer chicken taquitos seam side down in the air fryer basket. This will ensure they do not fall apart.
