I love air fryer apple hand pies, but feel free to fill the pie dough with your favorite pie filling. You can use homemade or canned pie filling; both options taste fantastic! Ingredients
Pie crust — you can use store-bought or homemade pie crust. I prefer the flakiness from a homemade crust, and you can make it up to 3 days in advance to save time.
Pie filling — both canned apple pie filling and my homemade apple pie filling recipe will work well.
Egg — mix the egg with water to make an egg wash. This creates a surface for the sugar to sticky to and helps them turn perfectly golden brown.
Coarse sugar — coarse sugar adds sparkle and crunch to the top of each pie.
How To Make Air Fryer Hand Pies
1. On a lightly floured surface, roll two homemade pie crusts to be ⅛-inch thick using a rolling pin. If using store-bought pie dough, simply unroll the crusts from the package.
2. Use a 4½- to 5-inch-diameter round cutter to cut 4 circles from each crust. You will end up with 8 dough circles in total.
3. Spoon a few slices of apple and about 1½ tablespoons of pie filling juice on one-half of each pie dough circle. Leave a ½-inch border. Set aside for the moment.
4. Make the egg wash by whisking together the egg with a little water.
5. Brush the edges of each pie dough circle with the egg wash to create a little stickiness.
6. Fold the empty half of each circle over the pie filling to create 8 half circles. Crimp the edges with the tines of a fork.
7. Brush the top of each hand pie with the egg wash.
8. Cut three small slits in the top of each hand pie to create steam vents.
9. Sprinkle with coarse sugar.
10. Working in batches, place 2 to 4 pies in the air fryer basket (depending on the size of your air fryer). Air fry at 350°F for 10 to 12 minutes. Cool the air fryer apple hand pies on a wire rack. Serve them warm.

- Use other fruit filling: Use cherry, blueberry, peach, strawberry or any fruit pie filling you like for this recipe. Homemade or canned pie fillings both work great! You can also use a thick fruit jam or preserves.
- Coat them with a glaze: Instead of topping with coarse sugar, you can glaze these air fryer hand pies with a powdered sugar glaze after baking. In a medium bowl, whisk together 1 cup (120g) of powdered sugar with 2 tablespoons water and ½ teaspoon vanilla extract until smooth. (The mixture should be very thin.) Once the baked hand pies have cooled slightly but are still warm, brush the glaze over the top. Let the pies cool completely to room temperature for the glaze to harden.
- Sprinkle with cinnamon sugar: Mix equal amounts of cinnamon and granulated sugar together and sprinkle it over the egg-washed hand pies before air frying for a deliciously crisp cinnamon sugar top. Alternatively, roll the hot air-fried hand pies in cinnamon sugar.

- How to reheat: The quickest way to reheat these hand pies is in the air fryer. Reheat them at 300°F for a few minutes until warmed through. Using the air fryer to reheat them will also rejuvenate the pies and make them crispy again!

- Use pie dough scraps: You can press together any pie dough trimmings and re-roll them once if you like. Your yield will be 9 to 10 hand pies instead of 8.
- Don’t overfill the pie crust circles: The filling will leak through if there is too much.
